This is an AMAZING product and the customer support ROCKS;)!
I am a professional sharpener; have one department in a large commercial account which insist on using cheap CHINA steel (8" and 10" Chef). It has been an ongoing process for me to get these knives razor sharp and for them to last more than a day.
The WE system has proven PERFECTLY in solving my problem.
It amazes me how quickly I can get the first time (WE), edge set and what a snap it is (1m to 3m!) to resharpen them back.
